The Haute-Saone, is one of 4 departments within the Franche Comte region of France. Nestled in the rural north east and bordered by the Champagne & Lorraine to the north, Burgundy to the west, Rhones to the South and Alsace & Swiss border to the East makes the region an interesting and varied environment for a holiday.

Haute-Saone and the Franche-Comte in general has a rich history, it is well known as part of the French revolution, playing a key role in the Resistance. Now it is well known for its delicious produce and cuisine.

As well as history the area has developed over recent years to provide a varied place to be whilst avoiding the heavy commercialism that often comes with tourism. Musuems, Galleries, Architecture, Boating, Walking, Cycling, Vineyards, River Cruises, horse riding, hunting and freshwater fishing are abundant. The cities of Basel, Belfort, Besancon and Troyes are within a comfortable drive.

Mont d’Or - sold in a wooden box, this cow’s milk cheese is runny when ripe and delicious oven baked, (see winter recipe for la boîte chaude)
Morbier - rich and creamy cow’s milk cheese with a black vein through the middle, traditionally made in two layers and sandwiched with ash.

Poulet de Bresse - top of the range AOC chicken from Bresse with distinctive blue feet, white feathers and red comb like a walking Tricolore. The birds are free-range, fed on corn and dairy.
Jambon fumé du Haut-Doubs - a lightly smoked, dry cured ham produced in the Jura mountains. Each one is dried for at least six months and is the perfect accompaniment to raclette.
Absinthe - the Franco-Swiss Abstinthe Trail reveals fields of herbs, smuggling locations, distilleries and museums. Pontarlier holds a biennial Fête de l’Absinthe in summer and produces a speciality pine liqueur too.
Kirsch - Cherries from orchards in Fougerolles are used to make the famous Kirsch but also jams, syrup, & desserts of all kinds.
